The Four Basic Crawfish Dipping Sauces

By Ray Zimmerman

There are thousands of crawfish dipping sauce recipes available, but you can narrow down the list to the four basic sauces. As a matter of fact, these dipping sauces are also ideal to serve with shrimp.

My favorite, although not the most popular among Cajuns, is my Crawfish Cocktail Sauce. This is the only dipping sauce that I ever use when eating boiled crawfish. With a slight variation, this will become one of the finest cocktail sauces that you will ever find to serve with boiled shrimp... right from the pot or chilled. This cocktail sauce is also ideal when served with fried shrimp.

Crawfish Cocktail Sauce Ingredients

1 1/2 cups Heinz Chili Sauce
1 cup Heinz Ketchup
2 tablespoons Prepared Horseradish
1 teaspoon Lemon Juice
1 teaspoon Worcestershire Sauce
1/8 teaspoon Red Pepper

Note: To use with shrimp, simply omit the red pepper from the recipe.

How to Prepare the Crawfish Cocktail Sauce

• In a small bowl, thoroughly mix the chili sauce, ketchup and horseradish together.

• Add the lemon juice and the Worcestershire sauce and mix well.

• Whisk the red pepper into the mixture.

• Place the cocktail sauce in a covered container and refrigerate.

Note: If you prefer, you can add additional horseradish, lemon juice and/or Worcestershire sauce to taste. This cocktail sauce will last for several months after being refrigerated.

The following crawfish dipping sauce is widely used at crawfish boils throughout Louisiana. This is an ideal dipping sauce for children since it is not very spicy. This sauce will compliment crawfish that have been highly seasoned.

The Basic Crawfish Dipping Sauce Ingredients

1 cup Mayonnaise
1 tablespoon Ketchup
2 dashes Tabasco or Louisiana Hot Sauce (to taste)

How to Prepare the Basic Crawfish Dipping Sauce

• In a small bowl, mix the mayonnaise and the ketchup together.

• Add a little Tabasco or Louisiana Hot Sauce at a time until the desired flavor is attained.

• Place the dipping sauce in a covered container and refrigerate.

Note: This dipping sauce will last for several months in the refrigerator.

The next crawfish dipping sauce is considered to be the standard for crawfish dipping sauces since it is a little more spicy compared to the previous recipe.

The Standard Crawfish Dipping Sauce Ingredients

1 cup Mayonnaise
1 tablespoon Ketchup
1/2 teaspoon Prepared Horseradish (to taste)
2 dashes Tabasco or Louisiana Hot Sauce (to taste)

How to Prepare the Standard Crawfish Dipping Sauce

• In a small bowl, thoroughly mix the mayonnaise, ketchup and horseradish together.

• Add a little Tabasco or Louisiana Hot Sauce at a time until the desired flavor is reached.

• If you prefer to kick up the heat, simply add a little horseradish at a time until you reach the desired intensity.

• Place the dipping sauce in a covered container and refrigerate.

Note: This dipping sauce will also last for several months in the refrigerator.

The following dipping sauce is the hottest of the four. If you prefer hot and spicy foods, this will be the ideal dipping sauce to choose.

The Hot Crawfish Dipping Sauce Ingredients

1 cup Mayonnaise
1/3 cup Hot & Spicy Creole Mustard
1 tablespoon Lemon Juice (to taste)
1 1/2 teaspoons Cajun Seasoning (Tony Chachere's Original Creole Seasoning)

How to Prepare the Hot Crawfish Dipping Sauce

• In a small bowl, thoroughly mix the mayonnaise and the Creole mustard together.

• Blend the lemon juice into this mixture.

• Whisk the Cajun seasoning into this mixture.

• Place in a covered container and refrigerate.

Note: If you prefer, you can add additional lemon juice and/or Cajun seasoning to taste. When refrigerated, this dipping sauce will last for several months.

Everyone has a different threshold for hot and spicy foods. It may take a little experimentation on your part to find the perfect combination of ingredients to determine the dipping sauce that you prefer. Remember that these dipping sauces are ideal with shrimp as well as crawfish regardless if they are fried or boiled.

Don't forget, the cocktail sauce without the red pepper is fantastic with fried or boiled shrimp. Enjoy!
